Madrid has changed in many ways over the last few years, but there’s one thing that never fails: when August arrives, the city empties out. The rush hour on the metro ceases to exist, there’s parking even in Malasaña on a Friday night, and you no longer need to reserve to go out for dinner. Of course, everyone goes on vacation, including restaurants. Undoubtedly, this month remains the time of the generalized exodus. But even so, there are still options. And they’re good ones! Here are ten options of Madrid restaurants open in August.

The one that’s impossible to book: Los 33 (Pl. de las Salesas, 9)

The grill at one of Madrid’s most sought-after restaurants continues to operate through August. Without a doubt, there’s no better moment to sit down and try what is the place to be in Salesas. What to order? Meat, obviously, but they also excel with vegetables on their grills, which taste even better with some of the bartender’s liquid creations. Of course, if it’s your first time, it’s best not to miss two of their best-selling dishes: the hanger steak and the bikini.

For a snack: Casa Bar Neutrale (Santísima Trinidad, 6)

A stone’s throw from Olavide, Casa Neutrale has opened its fifth venture. As its name suggests, the concept here is a bar, with its counter and a range of tapas and traditional Castilian dishes for sharing in the middle. Whether for lunch or dinner, you can expect gildas, marineras, croquettes, Russian salad, anchovies or boquerones to whet the appetite and then to spear your fork into their meatballs, their shrimp dish or the peppered sirloin.
