Montia: haute cuisine to “eat” the mountain
In June, the Madrid Academy of Gastronomy distinguished Montia as the Best Restaurant/Cuisine in Madrid 2026. The recognition goes to a project opened by Dani Ochoa in 2012 and that takes the Sierra de Guadarrama as its starting point: the calendar of the mountain guides the menu, while the harvesting, nearby crops and the work of small producers supply a very personal kitchen. Mushrooms, herbs, vegetables, game and ferments appear according to the season and translate the landscape onto the plate without turning it into a folkloric resource.
Its Michelin star and its two Repsol suns confirm the solidity of a very singular proposal within the Community of Madrid. The wine selection responds to the same curiosity, with numerous natural references and minimal intervention. Here the sierra does not function as a simple inspiration: it determines the ingredients, the rhythm and the identity of the menu.
