Just steps from Place Vendôme, Park Hyatt Paris-Vendôme opens autumn in grand style with the launch of SEOK, one of the year’s most anticipated venues in the French capital. And it does so in partnership with Mingoo Kang, one of Asia’s most influential chefs and the creator of Mingles in Seoul, which has earned three Michelin stars since 2025.
The name SEOK pays tribute to the chef’s father. His first Paris venture arrives with a proposal rooted in Korean culture that aims to reveal the essence of his cuisine from a contemporary and sophisticated perspective, respectful of its roots. That identity is also evident in the space, where there is no excess, but a serene atmosphere that invites enjoyment.
The interior has been designed by architect and artist Hugo Toro, who has managed to translate Korean culture without resorting to literal decorative codes. His inspiration came from dried leaves picked up in Paris and a small dark wooden box given to him by the chef. From these elements he created a warm space, based on black and brown woods, deep reds, copper, lime, glass, ceramics and lacquered surfaces. An amber-hued light envelops the restaurant, while parchment-slats on the ceiling carve curves that embrace the space. The tableware, crafted by Korean artisans for SEOK, reinforces the link between gastronomy, craftsmanship and culture.
SEOK is structured into three environments: the dinatoire bar, connected to the open kitchen; the dining room, more architectural and very comfortable; and a private space around a sculptural ten-person table.
Everything here speaks of sophistication without ostentation, discreet luxury and serene elegance. At the table, Mingoo Kang’s kitchen starts from the foundations of Korean tradition to reinterpret them with some of the finest French products.
