Romo

Romo (Buenos Aires Street, 28)

We are thrilled, because in Spain we are fortunate to have one of the best pizzerias in Europe and in the world. Sartoria Panatieri has been awarded on numerous occasions by the Top 50 Pizza World as one of the best in the world. Now the equation adds romo, the new Barcelona gastronomic project by Rafa Panatieri and Jorge Sastre, founders of Sartoria Panatieri and Brabo. Located in the Eixample Dreta, the restaurant marks a turning point in their journey: a bet on Roman-style pizza in a city where Neapolitan pizza dominates.

Unbound by any specific tradition, the project champions the Roman pizza as an equally rich and versatile alternative, with its own identity: thin, crispy, and with character. The dough is the central axis of the proposal; it is made with biga and fermented for 48 hours, yielding a more digestible pizza, with a light and crisp texture that defines the house style. A shift from their previous path that responds to a constant desire to try, evolve, and work with new processes. This is how they explain it in a press release: “After many years with the Neapolitan style, we felt like doing something different, stepping away from the known and exploring other paths.”

The space, with a capacity for 50 diners indoors and 16 on the terrace, reflects this new phase: a design with its own character where stainless steel, wood, brick, and a mix of colors and textures come together to create dynamism and a sense of closeness. With an average ticket between 22 and 25 euros, romo © presents itself as a contemporary pizzeria, conceived to be enjoyed at different moments: in the venue, to go, or to share.
